And So This Is Christmas- super quick non alcoholic mincemeat

Hi guys :)

Just a rather quick post sharing my super quick non alcoholic mincemeat recipe

YOU STILL HAVE TIME :)
This is not a measurement specific recipe, it's very much a chuck-it-all-in and adjust to taste

Recipe:
1 bag mixed dried fruit - you can buy own brand for about 85p (ish)
half a carton of apple juice
4 heaped tablespoons muscovado sugar- helps make it lovely and gooey, or you can reduce to two/three if you don't want it too sweet
half a grated bramley apple (or whatever apple you have to hand)
zest of half a lemon
juice of half a lemon (you can put the rest of the lemon to use too, slice thinly and dry it on low in the bottom of the oven for a few hours- et voila  -dried lemon peel- you can pop it in a cup of herbal tea or add to other recipes :)
a handful of beef or vegetable suet-whichever you prefer

Method
Whack it all in an oven dish and give it a good stir
Pop it in the bottom of the oven and bake on a very low heat for around half an hour, you will have a lovely sticky gooey mincemeat- also delicious in cakes if you have some left over :)

Our pantry now looks like a micro-brewery- but only one bottle is alcoholic, which is the rose wine in the middle.
i made more ginger wine, more lemon cordial and some raspberry cordial- yummy!
the raspberry cordial is the one on the end- such a beautiful jewel colour :)

I'm also making some onion chutney tomorrow as today we got a great 2 kg bag of onions for £1 at Morrisons :)
I do so enjoy making everything myself

  3. Yum! I didn't even make mince pies this year - and I love them. It was so hot here for Christmas, baking just wasn't fun at all!

*Peers round corner* Hello? Is anyone there? First of all, i would like to apologize for being so long updating here! It's been pretty busy around here, especially in the past month or two, and i have been updating mostly via Instagram.  We discovered that The Bearded Wonder has been having quite big heart issues , so much so that he was initially referred to get a pacemaker fitted, but on the day of his surgery the surgeon decided he was too young for a pacemaker and ended up fitting him with an under the skin monitor instead, which shall be in for 3 years, then he'll be re-assessed to see if a pacemaker is more suitable. He is doing well, and recovering nicely from the surgery. In other news, today is the day that Angus has been in our lives for a whole year! He was so tiny then. Hi Guys :) Thank you all for your kind words and advice after my... meltdown  minor setback, last week, it was very much appreciated. I have trimmed down the leeks to stabilize them, and am looking into setting in a hedge at the back of the house. I went to the local textiles group this afternoon, for a break, and i found this on my table when i came home. He bought it to cheer me up after my meltdown minor setback Ain't he sweet :')  I've been busy sorting out what used to be the pantry. Remember the lovely pantry? Well... (another sodding thing wrong with the house,  to add the list!!) it turns out that cupboard is too cold to store food and had started to grow mold on the shelves and warp the wood.So, all of the food has been moved back in to the tiny kitchen, and i have turned it into a coat room instead Bags on one side, hats in the middle  our most used summer coats and hats on the other   and my most used shoes in the bas...

Blessed and Yarning Along :)

Hi guys :) Today i am joining in with the Yarn Along :) (slightly late lol) I am declaring myself a genius! for weeks i have been trying to knit socks on 9in circulars, and i couldn't get it right. I cast on from the cuff and it was always too loose, so, i pondered for a while, threw it at the wall. And then suddenly it hit me (the idea, not the yarn bouncing off the wall :D )  Crochet the toe! I can't get my head around DPN's, they are far too complicated for me and so is the magic loop method, so this way is perfect! I can get a nice neat toe and can try it on as i go to get the length right, so off i went, and then threaded it through the needle and just went on knitting! So far it is working perfectly!
